2 lbs beef stew meat or sirloin steak, cut into 1 inch chucks
2 tbsp cooking fat (coconut oil, tallow, ghee, butter, etc
1 medium onion
4 garlic cloves, finely grated
3" piece ginger, finely grated
1/2 tsp ground cinnamon
1/4 tsp cayenne
3 tbsp curry powder
2 cans unsweetened coconut milk
Yogurt, naan and lime wedges for serving
Season meat generously with salt and pepper. Heat cooking fat in a large skillet, over medium heat. Add beef and cook, flipping once, until deeply golden, 3-5 minutes per side. Transfer to a plate.
Add onion to skillet and cook until soft, about 5 minutes. Add garlic, ginger and spices. Cooking until fragrant, about 1 minute. Add coconut milk and bring to a simmer. Reduce heat to low, add beef and continue to simmer until meat is tender, about 1 1/2 hours.
Serve with plain yogurt, naan, rice and lime wedges.
