2 large Acorn Squash, cut in half lengthwise
1 package of Well Rooted Farms Breakfast or Sweet Italian Sausage
1 onion, chopped
3 cloves of garlic, chopped
1 tbsp butter
2 large carrots, chopped
Freshly ground black pepper
1 cup white or brown rice, cooked
Preheat oven to 400 F & poke a few holes in the skin of the squash and place cut side down on a baking sheet. Put in oven and roast for 35 minutes. Once cooked, set aside.
Meanwhile, in a large pan over medium heat, melt butter & brown sausage. Add onion, garlic, and carrots, and cook until softened.
Scoop out the squash flesh, leaving about 1/4-inch on all sides. Add the rice and remove squash to the sausage mixture. Season generously with salt, pepper and Italian Seasoning.
Add the sausage filling back into the squash halves and bake at 375°F for 10 minutes until hot.
