1 3lb boneless pork shoulder roast
8 garlic cloves, minced
2 tsp ground coriander
2 tsp ground cumin
2 tsp dried oregano
1 tsp onion powder
1/2 tsp ground red pepper
1 cup broth (beef, chicken or vegetable)
Ground black pepper
Hamburger buns, kaiser rolls (split and toasted) or soft taco shells
Optional: shredded cheese, shredded veggies (cabbage, carrots, etc)
In a small bowl, combine spices & rub into pork. Place pork and broth in a roasting pan with lid. Cover and roast on 325 F for 2 1/2-3 hours, or until very tender.
Remove meat from liquid with a slotted spoon, discard excess fat from broth, reserving the liquid. When meat is cool enough to handle, shred using 2 forks to pull in opposite directions. Stir enough broth to moisten meat, reheat in a saucepan over medium heat, and serve on buns or in taco shells. Add additional optional options if desired.
